Mmm…bacon. While not a health food, this appetizer is definitely a yummy. It’s slightly sweet, slightly spicy, and definitely meaty. Perfect for a quick snack or as an appetizer at any get-together!
Bacon Wrapped Sriracha Chicken Bites
Servings 8 people
Ingredients
- 3-4 chicken breasts
- 1/3 c olive oil
- 2 Tbsp lime juice
- 4-6 Tbsp Sriracha sauce
- 1 lb bacon
- Honey to drizzle
Instructions
- Mix together the liquids and pour into a gallon sized plastic bag or an old bread bag
- Cut chicken into strips about 1 to 1 ½ inch in length
- Put the chicken strips into the the bag with the sauce and let rest 1-3 hrs in the fridge
- Take your lb of bacon and cut it into 3 equal sections
- Wrap each section of bacon around a strip of chicken and secure with a toothpick
- Arrange on an elevated rack in a backing pan to allow bacon grease to drain away
- Bake at 350° for 35-40 min
- Remove from oven and drizzle with honey for a little sweet
Notes
Note: If you prefer the bacon a little more crispy, then you can set the oven to broil after baking, flip the bites, broil for 2 minutes, flip back, and broil for 1 to 2 additional minutes before removing from the oven.
