Bacon Wrapped Sriracha Chicken Bites

Mmm…bacon. While not a health food, this appetizer is definitely a yummy. It’s slightly sweet, slightly spicy, and definitely meaty. Perfect for a quick snack or as an appetizer at any get-together!

Bacon Wrapped Sriracha Chicken Bites

Ingredients

  • 3-4 chicken breasts
  • 1/3 c olive oil
  • 2 Tbsp lime juice
  • 4-6 Tbsp Sriracha sauce
  • 1 lb bacon
  • Honey to drizzle

Instructions

  • Mix together the liquids and pour into a gallon sized plastic bag or an old bread bag
  • Cut chicken into strips about 1 to 1 ½ inch in length
  • Put the chicken strips into the the bag with the sauce and let rest 1-3 hrs in the fridge
  • Take your lb of bacon and cut it into 3 equal sections
  • Wrap each section of bacon around a strip of chicken and secure with a toothpick
  • Arrange on an elevated rack in a backing pan to allow bacon grease to drain away
  • Bake at 350° for 35-40 min
  • Remove from oven and drizzle with honey for a little sweet

Notes

Note: If you prefer the bacon a little more crispy, then you can set the oven to broil after baking, flip the bites, broil for 2 minutes, flip back, and broil for 1 to 2 additional minutes before removing from the oven.
